Brewing tea is deceptively simple — hot water, dry leaves, a moment of patience. But mastering the craft opens a world of nuance that can elevate an ordinary cup into something transcendent.
Step 1: Start With Good Water
Tea is over 99% water. Filtered water at a neutral pH (around 7) brings out the cleanest, brightest flavours. Avoid distilled water, which tastes flat, and heavily chlorinated tap water, which can mask delicate aromas.
Step 2: Heat to the Right Temperature
Different teas need different temperatures. Green teas and white teas flourish between 70–80°C — boiling water will scorch the leaves and produce bitterness. Black teas and pu-erh welcome a full 95–100°C. Oolongs sit in between at 85–90°C.
